Update: Eric Vale has since issued a retraction:
So I said in an interview what I “knew” the episode count of the new #FruitsBasket to be. See when you do back to back interviews, your brain scrambles and you start to “talk out of your butt” sometimes. Well, my butt is huge. And I spoke from there that day.

When the currently-running new adaptation of Fruits Basket was announced, one of the big selling points was that it would adapt the entire manga.
It wasn’t announced exactly how many episodes that would take, but it looks like that magic number might be 63.
That’s the word, at least, from voice actor Eric Vale, who plays Yuki in the English dub of the series.
Vale dropped that magic number during an interview at Anime Central 2019, saying “…telling the story from beginning to end, 63 episodes in total.”
The current series has been running since April, and is currently up to episode 10. Here’s how Funimation describes it:
Tohru Honda thought her life was headed for misfortune when a family tragedy left her living in a tent. When her small home is discovered by the mysterious Soma clan, she suddenly finds herself living with Yuki, Kyo, and Shigure Soma. But she quickly learns their family has a bizarre secret of their own: when hugged by the opposite sex, they turn into the animals of the Zodiac!
